Beer Cheese Soup

Beer cheese soup is my favorite in the winter and reminds me of home in Wisconsin. You can also add in season vegetables, such as broccoli and cauliflower.

Ingredients

  • 1 cup of chicken stock
  • 1 can or bottle of your favorite beer
  • 2 cups of diced potatoes
  • 1/2 cup of diced carrots
  • 1/2 cup of diced celery
  • 1/4 cup of chopped onion
  • 1 teaspoon of salt
  • 1/4 teaspoon of pepper
  • 1/4 cup of butter
  • 1/4 cup of flour
  • 2 cups of milk
  • 2 cups of grated cheddar cheese
  • 1 cup of cubed ham

Instructions

  1. Combine beer, chicken stock, potatoes, carrots, celery, onion, salt, and pepper in large kettle and boil for 10 – 12 minutes.
  2. In a small saucepan, melt butter and add flour. Stir until smooth. Slowly add milk and cook until thickened. Add grated cheese to the white sauce and stir until melted.
  3. Add white sauce and cubed ham to vegetables.
  4. Heat thoroughly.
