Macaroni and Cheese

Ingredients

  • 1/4 cup of butter divided
  • 1/4 cup of flour
  • 1 cup of milk
  • 16 oz. Velveeta(TM) cheese
  • 2-3 cups of cooked elbow macaroni
  • 1 cup of shredded sharp cheddar
  • 4 oz cream cheese
  • 6-8 Ritz(TM) cracker crumbled

Instructions

  1. Heat oven to 350 degrees
  2. Melt 3 tbs butter
  3. Whisk in flour
  4. Cook 2 minutes
  5. Slowly stir in milk
  6. Cook 3-5 minutes stirring constantly until thick
  7. Add Velveeta and cream cheese. Cook until melted
  8. Add macaroni
  9. Pour into a greased 2 qt casserole dish
  10. Sprinkle remaining cheddar on top
  11. Melt remaining butter and toss with cracker crumbs.
  12. Bake 20-30 minutes until heated.
